This Filipino Pork BBQ recipe showcases tender marinated pork shoulder or belly, infused with a delightful blend of pineapple juice, soy sauce, and banana ketchup. Grilled to perfection, it’s served alongside fluffy rice and crisp pickled cucumbers, creating a vibrant dish that embodies the flavors of Filipino cuisine.
2 pounds pork shoulder or pork belly, cut into thin strips or cubes
1 cup pineapple juice
1/2 cup brown sugar
Juice of 1 lemon
6 cloves garlic, minced
1/2 cup 7 Up
1/2 cup soy sauce
1 teaspoon onion powder
1/2 cup banana ketchup
Salt and pepper
Instructions
In a large bowl, combine pineapple juice, brown sugar, lemon juice, minced garlic, 7 Up, soy sauce, onion powder, and banana ketchup. Mix well until the sugar is dissolved and the ingredients are thoroughly combined.
Place the pork pieces in a large container and pour the marinade over them. Cover the container and refrigerate for at least 4 hours, preferably overnight for maximum flavour.
Preheat your grill to medium-high heat. If using a charcoal grill, wait until the coals are covered with gray ash.
Thread the marinated pork pieces onto the skewers, leaving a small gap between each piece for even cooking. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
Place the skewers on the preheated grill.
Grill the pork for about 10-15 minutes, turning occasionally, until the meat is cooked through and slightly charred on the edges.
Baste the pork with the remaining marinade during grilling to keep it moist and enhance the flavor.
Remove the pork BBQ from the grill and let it rest for a few minutes before serving.

Notes
Marination Time: For the best flavor and tenderness, marinate the pork overnight or for at least 4 hours. The longer, the better!
Meat Cut Selection: Use pork shoulder or pork belly for juicy results. These cuts have enough fat to keep the BBQ moist and flavorful.
Skewer Preparation: If you’re using bamboo skewers, always soak them in water for at least 30 minutes to prevent burning on the grill.
Grill Temperature: Preheat your grill to medium-high heat before placing the meat on it. This ensures a good sear and prevents sticking.
Basting Technique: Keep a brush handy to baste the pork with leftover marinade while grilling. This keeps the meat moist and enhances its flavor.
